WHY WE LOVE THIS RECIPE
We are a big fan of walnuts and love the combination of honey and walnuts together. We also love the softness of these cookies. Cinnamon is one of our favorite spices so that is a great addition to these cookies.
ARE THEY SOFT OR HARD?
These cookies are soft and get even better with time. These are definitely a cookie you can make a few days in advance as they keep well. Delicious with coffee or milk and you could always switch out the walnuts for pecans if you want to try that combination.
SWAPS
You could swap the cinnamon for nutmeg or allspice. You could also switch out the walnuts and use pecans if you like. This is made with vanilla extract but you could always mix it up and use maple.

Honey Walnut Cookies
These honey walnut cookies are so easy to make and delicious! My family loves them and yours will too. Simple ingredients you probably have on hand.
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1 cup honey
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3 cups all-purpose flour
- 1 cup walnut pieces

In a large mixing bowl whisk together eggs, honey, sugar, and vanilla. Add baking soda, cinnamon, and flour and mix well. Fold in walnuts. Spray a cookie sheet. Roll dough into balls with your hands and flatten with a fork dipped in sugar. (Can sprinkle more sugar over tops).

Bake in preheated 350 degree oven 10 to 15 minutes until golden brown on tops. Makes 2 to 3 dozen depending on size you make them
